Baked Broccoli and Cheddar Bites

BAKED BROCCOLI AND CHEDDAR BITES

Prep time: 15 minutes Cook time: 20-25 minutes Servings: About 12 bites

Ingredients

  • 1 large head of broccoli (about 3 cups finely chopped florets)

  • 1 cup whole wheat breadcrumbs

  • 1 cup shredded sharp cheddar cheese

  • 2 large eggs, lightly beaten

  • 2 cloves garlic, minced

  • 1/4 cup grated Parmesan cheese

  • 1 teaspoon dried parsley

  • 1/2 teaspoon onion powder

  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a muffin tin with cooking spray.

  2. Chop the broccoli: Finely chop the broccoli florets into very small pieces. You want them to be almost like a coarse crumble so they bind together nicely.

  3. Mix everything together: In a large bowl, combine the chopped broccoli, breadcrumbs, cheddar cheese, eggs, minced garlic, Parmesan cheese, dried parsley, and onion powder. Season with salt and pepper. Mix until everything is well combined and the mixture holds together when you press it.

  4. Form the bites: Scoop about 2 tablespoons of the mixture into each muffin cup. Press the mixture down gently with the back of a spoon to make sure they are firm and will hold their shape.

  5. Bake: Bake for 20-25 minutes, or until the tops are golden brown and the bites are firm to the touch.

  6. Cool and serve: Let them cool in the muffin tin for a few minutes before transferring them to a wire rack. This helps them hold their shape.

You can enjoy these warm or at room temperature. They're great on their own or with a little Greek yogurt or light sour cream for dipping. Enjoy!
