I used those mozzarella cheese strings you can get in the supermarket for mine, and they came out perfectly. The key bit here is to pop the cheese in the freezer for half an hour first; it's a game-changer and stops all that messy leaking.

One of the biggest problems with homemade mozzarella sticks is when the cheese just splurges out everywhere. That happens when the cheese gets too hot and boils before the coating has a chance to crisp up. Freezing them beforehand sorts all that out.
The Bits and Bobs You’ll Need
Mozzarella cheese strings: These are brilliant for this recipe. They're already the perfect shape and melt beautifully. If you can't find them, regular mozzarella will work just fine.
Eggs: You'll need two large eggs to make the batter, which acts as a protective layer and helps the breadcrumbs stick.
Plain flour: This just helps thicken up the egg batter.
Seasonings: A simple mix of salt, black pepper, garlic powder, onion powder, and Italian seasoning is all you need.
Panko breadcrumbs: These Japanese breadcrumbs are light and flaky, giving you an extra-crispy texture. If you don't have them, regular breadcrumbs are fine.

Prep the cheese: Cut each cheese string in half, then put them in the freezer for at least 30 minutes. This is a must-do step!
Make the batter: In a shallow dish, whisk together the eggs, flour, salt, black pepper, garlic powder, and onion powder.
Prep the breadcrumbs: In a separate dish, mix the panko breadcrumbs and Italian seasoning.
Coat the cheese: Dip a cheese stick in the egg wash, let the excess drip off, then roll it in the breadcrumbs until it's completely covered.
Air-fry: Pop the coated cheese sticks into your air fryer basket. Cook them at 200°C (400°F) for 6-8 minutes until they're golden brown and crispy.
Serve: Serve them with a bit of my homemade marinara sauce for dipping.
