HEALTHY INDIAN BUTTER CHICKEN

Healthy Indian Butter Chicken

Serves: 4 Prep time: 15 mins Cook time: 30 mins

Ingredients

  • 500g skinless chicken breast, diced

  • 1 tbsp olive oil

  • 1 large onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp ginger, grated

  • 1 can (400g) crushed tomatoes

  • 1 cup chicken stock

  • 1 tsp garam masala

  • 1 tsp cumin

  • 1 tsp coriander

  • 1/2 tsp turmeric

  • 1/2 cup Greek yoghurt

  • Fresh coriander, to serve

  • Brown rice and steamed greens, to serve

Method

  1. Marinate the chicken: In a bowl, toss the chicken with half the garam masala, cumin, and coriander. Let it sit for at least 15 minutes.

  2. Sauté the aromatics: Heat the olive oil in a large pan over medium heat. Add the onion and cook until soft and translucent, about 5 minutes. Add the garlic and ginger and cook for another minute until fragrant.

  3. Build the sauce: Stir in the remaining spices (garam masala, cumin, coriander, and turmeric) and cook for 30 seconds. Pour in the crushed tomatoes and chicken stock. Bring to a simmer, then reduce the heat and let it bubble away for 10-15 minutes, or until the sauce has thickened slightly.

  4. Cook the chicken: Add the marinated chicken to the sauce and cook for 5-7 minutes, or until the chicken is cooked through.

  5. Finish it off: Remove the pan from the heat and stir in the Greek yoghurt until the sauce is creamy. Don't add the yoghurt while the pan is on the heat, or it might curdle!

  6. Serve: Garnish with fresh coriander and serve with brown rice and your favourite steamed veggies. Too easy!
