CRISPY BAKED CARROT BITES

 These Crispy Baked Carrot Bites offer a delightful, guilt-free way to enjoy a sweet and salty snack. Smashed carrots are coated in a vibrant mix of herbs and spices and baked to golden perfection. They are great as a light appetizer, a unique side dish, or a healthy alternative to fries.

CRISPY BAKED CARROT BITES



Ingredients:

  • 4 large carrots, peeled and sliced into ½-inch thick rounds

  • 1 tbsp olive oil

  • ½ tsp garlic powder

  • ½ tsp dried thyme or dried parsley

  • ¼ tsp smoked paprika

  • ¼ tsp sea salt, or to taste

  • ⅛ tsp black pepper

  • For garnish (optional): Fresh chopped parsley, and a light sprinkling of parmesan cheese or nutritional yeast.

Instructions:

  1. Preheat & Prep: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper. This ensures the carrots don't stick and helps with clean-up.

  2. Soften the Carrots: Place the carrot rounds in a microwave-safe bowl with 1 tablespoon of water. Cover the bowl and microwave on high for 3-4 minutes, until the carrots are just tender when pierced with a fork. Alternatively, you can steam them for 5-7 minutes. Drain any excess water.

  3. Smash and Season: Spread the carrot rounds evenly on the prepared baking sheet. Using the bottom of a heavy, flat glass or jar, gently press down on each round until it is about ¼-inch thick. Be careful not to smash them so hard that they break apart. In a small bowl, whisk together the olive oil, garlic powder, dried thyme/parsley, smoked paprika, sea salt, and black pepper. Lightly brush this seasoning mixture onto each smashed carrot piece.

  4. Bake to Perfection: Place the baking sheet in the preheated oven. Bake for 18-20 minutes, flipping the carrot bites halfway through the cook time. They are done when they are golden brown on both sides and have crispy edges.

  5. Garnish and Serve: Remove from the oven. Let them cool for a couple of minutes on the baking sheet to firm up. Transfer to a serving platter, and garnish with fresh parsley and a dusting of parmesan cheese (if using). Serve immediately, and enjoy!
