Ingredients

For the Waffle Batter:

  • 1 scoop (approx. 30g) vanilla protein powder (whey isolate or plant-based)

  • 1 tablespoon sugar or zero-calorie sweetener (like Monk fruit erythritol blend)

  • 1 ½ teaspoons baking powder

  • ¼ teaspoon salt

  • 1 large egg

  • 1 cup (240ml) milk (skim, almond, or oat milk)

  • 2 tablespoons (28g) melted butter or coconut oil

  • ½ teaspoon vanilla extract

For the Optional High-Protein Topping:

  • ½ cup non-fat plain Greek yogurt

  • 1 tablespoon maple syrup or honey

  • ¼ teaspoon vanilla extract

For Garnish (as pictured):

  • Fresh strawberries (sliced and whole)

  • Fresh blueberries

  • Real maple syrup

  • Optional: a sprinkle of granola, chia seeds, or cinnamon

Instructions

  1. Preheat and Prepare: Turn on your waffle iron and allow it to heat to its maximum setting. Lightly grease the grids with cooking spray if they are not non-stick.

  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, protein powder, sweetener, baking powder, and salt until well combined.

  3. Mix Wet Ingredients: In a separate medium bowl, whisk together the egg, milk, melted butter/oil, and vanilla extract.

  4. Combine: Pour the wet ingredients into the dry ingredients. Mix with a spatula just until the batter is smooth and combined; do not overmix.

  5. Cook the Waffles: Pour about ½ cup of the batter onto the hot waffle iron. Close the lid and cook until the waffle is golden brown and crispy (usually 3–5 minutes, depending on your waffle iron). Repeat with the remaining batter.
