Lemon Ginger Turmeric Fit Soup

Ingredients:

  • 1 tablespoon olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1-inch piece of fresh ginger, grated

  • 1 teaspoon ground turmeric

  • 1/2 teaspoon ground black pepper

  • 4 cups chicken broth (low sodium preferred)

  • 1 cup cooked shredded chicken breast

  • 1/2 cup uncooked white rice (such as basmati or jasmine)

  • Juice of 1 lemon

  • Salt to taste

  • For garnish: fresh parsley, chopped, and lemon slices

Instructions:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened, about 5 minutes.
