 These healthy, crispy rice paper rolls are the perfect, light-yet-satisfying snack or light meal. We've packed them with lean protein and veggies, and they get incredibly crunchy in the air fryer, making them a delicious and guilt-free treat.

Protein-Packed Crispy Rice Paper Rolls (Air Fryer)



Ingredients:

For the Rolls:

  • 6-8 round rice paper wrappers (about 8.5 inches / 22 cm diameter)

  • 2 tsp avocado oil or olive oil

  • For the Protein-Packed Filling:

    • 8 oz (225g) extra-firm tofu, pressed and crumbled, OR 8 oz (225g) ground turkey or chicken

    • 1 cup shredded carrots

    • 1 cup shelled edamame, pre-cooked (if using frozen)

    • 2 green onions, thinly sliced (white and green parts)

    • 1 tbsp soy sauce (or tamari for GF)

    • 1 tsp rice vinegar

    • 1 tsp sesame oil

    • 1/2 tsp ginger, minced or grated

    • 1/4 tsp garlic powder

    • Pinch of red pepper flakes (optional, for a kick)

    • Salt and black pepper to taste

For the Dipping Sauce & Garnish:

  • 1/4 cup soy sauce (or tamari for GF)

  • 1 tbsp toasted sesame seeds (black and white mixed)

  • Extra sliced green onions, for serving


Instructions:

  1. Prepare the Filling:

    • In a medium bowl, combine the protein (crumbled tofu or ground meat), shredded carrots, cooked edamame, sliced green onions, soy sauce, rice vinegar, sesame oil, ginger, and spices.

    • Mix everything together until the ingredients are well distributed and the protein is evenly coated in the marinade. Season with salt and pepper to your preference.

  2. Soften the Rice Paper:

    • Fill a large, shallow bowl or pie dish with warm (not hot) water.

    • Submerge one rice paper sheet in the water for about 10-15 seconds, or just until it becomes pliable and soft. Be careful not to over-soak, as it will become too delicate.

    • Carefully transfer the softened sheet to a clean, flat work surface (like a large cutting board) or a clean, dry cloth.

  3. Fill and Fold the Rolls:

    • Spoon 3-4 tablespoons of the filling onto the lower third of the rice paper, shaping it into a log.

    • Fold the bottom of the rice paper over the filling, tucking it snugly.

    • Fold the two side edges of the rice paper in towards the center, sealing the ends.

    • Gently and tightly roll the rest of the paper upwards from the bottom until it is fully sealed. Place the completed roll seam-side down on a plate.

    • Repeat this process for the remaining wrappers and filling.

  4. Air Fry for Ultimate Crispiness:

    • Preheat your air fryer to 400°F (200°C).

    • Lightly brush all sides of the prepared rice paper rolls with avocado oil. This is key to achieving a deep golden brown color and maximum crunch.

    • Arrange the rolls in a single layer in the air fryer basket, ensuring they do not touch to allow for proper air circulation. You may need to cook them in two batches.

    • Air fry for 12-15 minutes, carefully flipping them halfway through, until they are golden brown all over and very crisp.

  5. Prepare the Dipping Sauce and Garnish:

    • While the rolls are air frying, whisk together the soy sauce and toasted sesame seeds in a small ramekin.

    • Remove the crispy rolls from the air fryer.

  6. Serve and Enjoy!

    • Garnish the finished rolls with a few extra sliced green onions and a sprinkle of black sesame seeds, just like in the picture.

    • Serve them hot, immediately, alongside the prepared dipping sauce. Grab one, dip, and crunch!
