For the Banana Chia Pudding Base:
3 very ripe bananas, peeled
1 ½ cups unsweetened almond milk (or milk of your choice)
½ teaspoon vanilla extract
½ teaspoon ground cinnamon (plus extra for garnish)
1 tablespoon maple syrup (optional, depending on how ripe and sweet your bananas are)
⅓ cup chia seeds
For the Whipped Topping & Garnish:
½ cup plain or vanilla Greek yogurt (non-fat or low-fat)
1 banana, for slicing

Step 1: Prepare the Banana Pudding Base
In a blender, combine the 3 ripe bananas, almond milk, vanilla extract, and ½ teaspoon ground cinnamon. Blend until completely smooth. If using maple syrup, add it now and blend briefly. Taste and add maple syrup only if you feel it's not sweet enough (very ripe bananas are usually enough!).
Pour the banana-milk mixture into a bowl or a large jar with a lid. Add the ⅓ cup of chia seeds.
The Secret is in the Stir: Stir well with a whisk to break up any clumps of seeds. Wait about 5-10 minutes for the seeds to begin to swell and settle, then stir or whisk vigorously again. This is crucial for a smooth pudding!
