Zesty Lemon & Oregano Roasted Potatoes

Yields: 4-6 servings

Prep Time: 15 minutes

Cook Time: 45-55 minutes

Ingredients:

  • 2 lbs (about 900g) Baby or fingerling potatoes, washed and halved (larger potatoes should be quartered)

  • 3 tbsp Olive oil

  • 1 Large lemon, juiced

  • 1 tsp Lemon zest, finely grated

  • 1 tbsp Dried oregano (Greek or Mediterranean preferred)

  • 1 tsp Kosher salt, or to taste

  • ½ tsp Black pepper, freshly ground

  • 3 Cloves garlic, minced

  • 2 tbsp Fresh parsley, chopped (for garnish)

  • ½ cup Feta cheese, crumbled (optional)

  • Optional: a pinch of red pepper flakes for heat

Instructions:

  1. Prepare the Oven and Potatoes: Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly. If using baby or fingerling potatoes, halve them lengthwise. For larger potatoes, quarter them or cut into uniform-sized wedges. Pat the potatoes completely dry with paper towels (this is crucial for maximum crispiness).

  2. Mix the Dressing: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, dried oregano, salt, black pepper, and minced garlic (and red pepper flakes, if using).

  3. Toss and Roast: Place the dried potatoes on a large, rimmed baking sheet. Drizzle the lemon-oregano dressing over the potatoes. Toss them with your hands or tongs until they are evenly coated. Arrange them in a single layer on the baking sheet, ensuring they are not overcrowded (overcrowding will steam the potatoes instead of roasting them).

  4. Bake and Turn: Roast the potatoes for 30 minutes. Remove the baking sheet from the oven and carefully toss the potatoes to ensure they brown evenly. Return to the oven and roast for another 15-25 minutes, or until the potatoes are golden-brown and crispy on the outside and tender on the inside.

  5. Finish and Garnish: Remove the roasted potatoes from the oven. Transfer them to a serving dish (or serve directly from the baking sheet). Garnish immediately with fresh chopped parsley. If using, sprinkle the crumbled feta cheese over the hot potatoes just before serving.

Tips for Success:

  • Dry Completely: The secret to the crispiest roasted potatoes is ensuring they are completely dry before tossing them with the oil and seasonings. Any excess moisture will create steam and prevent a good sear.

  • Single Layer: Don't overcrowd the baking sheet! Giving the potatoes space will allow the hot air to circulate freely, resulting in even browning and crispiness. Use two baking sheets if necessary.

  • Herb Variations: Feel free to swap or add other dried herbs like thyme or rosemary. Fresh herbs like dill or chives can also be used for garnish.

  • Feta Matters: Use a good quality block of Greek feta cheese and crumble it yourself for the best texture and flavor. It should be creamy and slightly tangy.

  • Adjust Seasoning: Taste a potato after roasting and adjust the salt and pepper if needed before adding the garnishes. The amount of salt you need may vary based on the type of salt and your personal preference.

What to Serve With:

  • Roasted Chicken: This classic pairing is always a winner. The brightness of the lemon potatoes complements the savory flavor of roast chicken perfectly.

  • Grilled Fish: The zesty flavors of the potatoes pair beautifully with grilled salmon, bass, or other white fish.

  • Burgers and Sandwiches: Instead of French fries, serve these flavorful roasted potatoes alongside your favorite burgers and sandwiches.

  • Pork Chops: The earthy oregano notes and tangy lemon flavor go wonderfully with grilled or pan-seared pork chops.
