This fitness-friendly twist on a classic takeout favorite uses instant ramen noodles (sans the high-sodium flavor packet) paired with lean protein and fresh greens to keep you fueled and satisfied.
Ingredients
For the Stir Fry:
2 packs of instant ramen noodles (discard the flavor packets)
1 lb flank steak, thinly sliced against the grain
2 cups broccoli florets
1 tbsp olive oil or sesame oil
1 tbsp sesame seeds (for garnish)
Red pepper flakes (optional, to taste)
For the Healthy Stir Fry Sauce:
1/3 cup low-sodium soy sauce (or tamari)
2 tbsp water or low-sodium beef broth
1 tbsp honey or maple syrup
3 cloves garlic, minced
1 tsp fresh ginger, grated
1 tsp cornstarch (to thicken)
Instructions
Prep the Noodles: Bring a pot of water to a boil. Add the ramen noodles and cook for just 2 to 3 minutes until al dente (they will cook more in the pan). Drain, rinse with cold water to stop the cooking, and set aside.
Whisk the Sauce: In a small bowl, whisk together the soy sauce, water, honey, minced garlic, grated ginger, and cornstarch until smooth.
Sear the Beef: Heat half of the oil in a large skillet or wok over medium-high heat. Add the sliced beef in a single layer. Cook for about 2 minutes per side until browned. Remove the beef from the skillet and set aside on a plate.
Steam the Broccoli: Add the remaining oil to the same skillet. Toss in the broccoli florets and 2 tablespoons of water. Cover with a lid for 2 minutes to let the broccoli steam slightly until it turns bright green but remains crisp.
Combine and Toss: Turn the heat down to medium. Add the cooked beef and drained ramen noodles back into the skillet with the broccoli. Pour the sauce over everything.
Thicken and Serve: Toss everything continuously for 1 to 2 minutes until the sauce bubbles, thickens, and completely coats the noodles.
Serving Tip: Garnish with sesame seeds and a pinch of red pepper flakes for an extra kick!
