Ingredients

For the Stir Fry:

  • 2 packs of instant ramen noodles (discard the flavor packets)

  • 1 lb flank steak, thinly sliced against the grain

  • 2 cups broccoli florets

  • 1 tbsp olive oil or sesame oil

  • 1 tbsp sesame seeds (for garnish)

  • Red pepper flakes (optional, to taste)

For the Healthy Stir Fry Sauce:

  • 1/3 cup low-sodium soy sauce (or tamari)

  • 2 tbsp water or low-sodium beef broth

  • 1 tbsp honey or maple syrup

  • 3 cloves garlic, minced

  • 1 tsp fresh ginger, grated

  • 1 tsp cornstarch (to thicken)

Instructions

  1. Prep the Noodles: Bring a pot of water to a boil. Add the ramen noodles and cook for just 2 to 3 minutes until al dente (they will cook more in the pan). Drain, rinse with cold water to stop the cooking, and set aside.

  2. Whisk the Sauce: In a small bowl, whisk together the soy sauce, water, honey, minced garlic, grated ginger, and cornstarch until smooth.
