The Noodles & Fresh Base
4 oz dried rice noodles (or spaghetti, or udon)
½ cup shelled edamame (fresh or frozen)
¼ small head red cabbage, thinly sliced
½ small yellow bell pepper, julienned
½ small red bell pepper, julienned
½ cup carrots, finely diced or shredded
¼ cup fresh cilantro, leaves only, roughly chopped
The Silky Peanut Sauce
½ cup creamy peanut butter
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp honey or maple syrup
1 tsp fresh ginger, grated
2 cloves garlic, minced
2-4 tbsp warm water (to thin to desired consistency)
Instructions
1. Prepare the Noodles: Cook your choice of noodles according to the package directions. Once cooked, drain them and rinse under cold water to stop the cooking and prevent sticking.
2. Blanch the Edamame: If using frozen edamame, bring a small pot of water to a boil. Add the edamame and cook for 2-3 minutes. Drain and rinse under cold water.
3. Make the Peanut Sauce: In a medium bowl, combine the peanut butter, soy sauce, rice vinegar, honey, grated ginger, and minced garlic. Whisk until smooth. The sauce will be very thick. Add warm water, one tablespoon at a time, and whisk until the sauce is smooth and easily pourable.
4. Assemble the Bowl: Divide the cooked noodles between two large bowls. Arrange the prepared vegetables—red cabbage, yellow pepper, red pepper, carrots, edamame, and cilantro—in neat piles around or on top of the noodles.
5. Serve: Just before serving, drizzle the rich peanut sauce over the top of the bowl, allowing it to coat the ingredients. You can also mix the entire bowl together before eating to ensure every bite is covered in sauce.
