Black Pepper Tofu & Green Beans

Ingredients:

For the tofu:

  • 1 block (about 14 oz) firm or extra-firm tofu, pressed for at least 30 minutes and cut into cubes

  • 2 tablespoons cornstarch

  • 1 tablespoon sesame oil or canola oil

For the stir-fry:

  • 1 lb green beans, trimmed

  • 2 cloves garlic, minced

  • 1 teaspoon ginger, minced

  • 1 red chili, sliced (optional, for heat)

For the black pepper sauce:

  • 1/4 cup soy sauce (or tamari for gluten-free)

  • 2 tablespoons water or vegetable broth

  • 1 tablespoon black peppercorns, freshly ground (or more to taste)

  • 1 tablespoon maple syrup or agave nectar

  • 1 tablespoon cornstarch mixed with 1 tablespoon water (cornstarch slurry)

Black Pepper Tofu & Green Beans

Instructions:

  1. Prepare the tofu: Pat the pressed tofu cubes dry with a paper towel. Place them in a bowl and toss with cornstarch until evenly coated.

  2. Crisp the tofu: Heat the oil in a large skillet or wok over medium-high heat. Add the coated tofu cubes in a single layer, ensuring they aren't overcrowded. Cook for 3-4 minutes per side, or until golden brown and crispy. Remove from the skillet and set aside.

  3. Prepare the sauce: In a small bowl, whisk together the soy sauce, water (or broth), ground black pepper, maple syrup (or agave nectar), and cornstarch slurry. Set aside.

  4. Sauté the aromatics: Wipe out the skillet used for the tofu and add a bit more oil if needed. Add the minced garlic, minced ginger, and sliced red chili (if using) and cook for 30 seconds until fragrant.

  5. Cook the green beans: Add the trimmed green beans to the skillet and sauté for 4-5 minutes, or until tender-crisp. You might need to add a splash of water to help them cook evenly.

  6. Add the tofu and sauce: Return the crispy tofu to the skillet with the green beans. Pour the black pepper sauce over the mixture.

  7. Thicken the sauce: Toss everything together and bring the sauce to a simmer. Cook for 1-2 minutes, or until the sauce has thickened and coated the tofu and green beans.

  8. Serve: Garnish with green onions and sesame seeds if desired. Serve immediately with steamed rice or noodles.
