Crispy Tofu Parm Sandwich

This recipe transforms simple tofu into a restaurant-worthy vegetarian classic. The secret to a perfect Tofu Parm is getting the tofu extra crispy to contrast with the marinara and melty mozzarella.

Crispy Tofu Parm Sandwich

Ingredients

  • 1 block extra-firm tofu

  • 1 cup marinara sauce

  • 4 oz fresh mozzarella cheese, sliced or shredded

  • 4 thick slices of bread (like sourdough, ciabatta, or Italian)

  • 1/2 cup all-purpose flour

  • 1 large egg, lightly beaten (or 1/4 cup non-dairy milk for a vegan option)

  • 1 cup Italian-seasoned panko breadcrumbs

  • 3 tbsp olive oil

  • 2 tbsp butter

  • Fresh basil and parsley, chopped, for garnish

Instructions

  1. Prepare the Tofu: To ensure the tofu gets as crispy as possible, press it first. Slice the tofu into 1/2-inch thick patties. Lay the slices on a paper towel-lined plate, cover with another paper towel, and place a heavy object (like a skillet or a cookbook) on top. Press for at least 15 minutes to remove excess moisture.

  2. Breading Station: Set up three shallow bowls. Put flour in the first, the beaten egg in the second, and the breadcrumbs in the third. Lightly dip each pressed tofu patty into the flour, shaking off the excess. Then, dip it in the egg, and finally, press it firmly into the breadcrumbs, ensuring it's fully coated.

  3. Pan-Fry the Tofu: Heat the olive oil in a large skillet over medium-high heat. Carefully place the breaded tofu patties into the hot pan and cook for 3–4 minutes per side, or until they are golden brown and crispy. Remove from the skillet and set aside on a wire rack or paper towel.

  4. Assemble and Grill the Sandwiches: Take two slices of bread and lightly butter the outside of each. On the inside of one slice, spread a thin layer of marinara sauce. Add a slice of mozzarella, top with a crispy tofu patty, another spoonful of marinara, another slice of mozzarella, and finally, the other slice of bread.

  5. Cook the Sandwich: Wipe out the skillet and heat it over medium heat. Place the assembled sandwich into the hot pan. Cook for 2–3 minutes, until the bottom is golden brown and the cheese is starting to melt. Flip and cook for another 2 minutes, until both sides are toasted and the mozzarella is gooey.

  6. Serve: Let the sandwich rest for a minute, then cut in half and garnish with fresh parsley and basil. Enjoy immediately!
