Ingredients:

For the Stir Fry:

  • 2 packs instant ramen noodles (discard or save seasoning packets for another use)

  • 1 lb flank steak, cut into 1/4-inch slices

  • 2 tablespoons soy sauce, divided

  • 1 tablespoon rice vinegar

  • 1 tablespoon cornstarch, divided

  • 1 tablespoon vegetable oil, plus more as needed

  • 1 large head of broccoli, cut into bite-size florets

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • Optional garnish: Sesame seeds, red pepper flakes, sliced green onions

For the Sauce:

  • 1/2 cup low-sodium beef broth (or water)

  • 3 tablespoons brown sugar

  • 1/2 teaspoon dark sesame oil

Instructions:

  1. Prepare the Noodles: Cook the ramen noodles according to package instructions until tender (about 3 minutes). Drain and set aside.

  2. Prepare the Beef & Marinade: In a bowl, combine sliced flank steak, 1 tablespoon soy sauce, rice vinegar, and 1 tablespoon cornstarch. Toss until evenly coated and let marinate for at least 15 minutes.

  3. Mix the Sauce: In another small bowl, whisk together beef broth, remaining 1 tablespoon soy sauce, brown sugar, and sesame oil. Set aside.

  4. Stir-Fry the Beef: Heat 1 tablespoon vegetable oil in a large wok or skillet over high heat. Add the marinated beef in a single layer (do this in batches if needed). Let it sear for 1-2 minutes until browned, then stir and cook for 1-2 minutes more, until cooked through. Remove the beef to a plate and set aside.

  5. Cook the Broccoli: Add a little more oil to the wok if dry. Add the broccoli florets and stir-fry for 3-4 minutes, or until tender-crisp. You can add a tablespoon of water and cover for 1-2 minutes to speed up the steaming process. Remove the broccoli to the plate with the beef.

  6. Create the Base: Add the minced garlic and grated ginger to the wok and stir-fry for 30 seconds until fragrant, being careful not to burn them.

  7. Thicken the Sauce & Combine: Give the sauce mixture a quick whisk. Pour it into the wok. Let it simmer for 1 minute, stirring frequently, until it bubbles and thickens slightly.

  8. Toss Everything: Add the cooked ramen noodles, cooked beef, and broccoli back into the wok. Use tongs to toss everything together until everything is evenly coated in the sauce and heated through.

  9. Serve: Garnish immediately with sesame seeds, red pepper flakes, and/or green onions. Serve hot and enjoy!
