Ingredients
6 cups Crispy rice cereal (Rice Krispies)
1 package (10 oz) Mini marshmallows (reserve 1 cup for mixing in later)
¾ cup Creamy peanut butter
4 tbsp Unsalted butter
1 tsp Pure vanilla extract
½ cup Semi-sweet or milk chocolate chips (plus a few extra for topping)
Optional: A pinch of sea salt to balance the sweetness
Instructions
1. Prep Your Pan
Line a 9x13-inch baking dish with parchment paper, leaving a bit of overhang on the sides for easy removal later. Lightly spray with non-stick cooking spray.
2. Melt the Base
In a large pot or Dutch oven, melt the butter over low heat. Once melted, add the creamy peanut butter and the majority of the mini marshmallows (minus the 1 cup you reserved). Stir continuously on low heat until completely melted and smooth.
3. Flavor and Mix
Remove the pot from the heat. Stir in the vanilla extract (and a pinch of sea salt if using). Immediately add the crispy rice cereal and gently fold until the cereal is evenly coated in the peanut butter mixture.
4. Add the Mix-Ins
Let the mixture cool for about 1–2 minutes (so your chocolate chips don't melt entirely!). Fold in the remaining 1 cup of mini marshmallows and the chocolate chips until just distributed.
5. Press and Cool
Transfer the mixture into your prepared baking dish. Using a piece of wax paper or a greased spatula, gently press the mixture into an even layer. Do not pack it down too tightly, or the treats will become hard! Top with a few extra chocolate chips and a drizzle of melted peanut butter if desired.
6. Slice and Serve
Let the treats cool at room temperature for about 30–45 minutes until set. Lift them out using the parchment paper edges, slice into squares, and enjoy the gooey goodness!
