Ingredients:

  • 1 tablespoon olive oil

  • 1 lb (450g) andouille or smoked sausage, sliced into 1/2-inch rounds

  • 1 medium onion, diced

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 2 cloves garlic, minced

  • 1 tablespoon Cajun or Creole seasoning

  • 1 teaspoon dried oregano

  • 1/2 teaspoon smoked paprika

  • 2 cups chicken or vegetable broth

  • 1 cup long-grain white rice

  • 2 (15 oz) cans black beans, rinsed and drained

  • 1 (14.5 oz) can diced tomatoes (optional)

  • Fresh parsley, for garnish

  • Salt and black pepper to taste

Easy Black Beans & Rice with Sausage

Instructions:

  1. Brown the Sausage: In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Add the sliced sausage and cook until browned on all sides, about 5-7 minutes. Remove the sausage from the pot and set aside.

  2. Sauté the Aromatics: To the same pot, add the diced onion, red bell pepper, and green bell pepper. Sauté for 5 minutes, or until the vegetables are tender. Add the minced garlic and cook for an additional 1 minute, until fragrant.

  3. Toasting the Spices and Rice: Stir in the Cajun seasoning, oregano, and smoked paprika. Cook for 30 seconds to toast the spices. Add the uncooked white rice to the pot and stir constantly for 1-2 minutes, until the rice is lightly toasted and coated in the spices.

  4. Simmer: Pour in the chicken broth, making sure to scrape up any browned bits from the bottom of the pot. Add the diced tomatoes (if using) and the black beans. Stir to combine.

  5. Cook the Rice: Bring the mixture to a boil. Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed. Avoid lifting the lid during cooking to ensure proper steaming.

  6. Combine and Serve: Once the rice is cooked, fluff it with a fork. Gently fold the browned sausage back into the pot and let everything heat through for a minute or two.

  7. Garnish and Enjoy: Taste and season with additional salt and pepper if needed. Serve hot, garnished generously with freshly chopped parsley.
