Description: This Golden Onion Butter Rice is a simple yet sophisticated rice preparation that's full of flavor and texture. The onions are slowly caramelized in butter until they are soft, sweet, and golden brown, which adds depth and richness to the dish. The rice is then toasted in the butter and onion mixture, which allows it to absorb all the delicious flavors. A pinch of turmeric gives the rice its beautiful golden color, while fresh parsley adds a touch of brightness and freshness. The resulting rice is fluffy, savory, and incredibly satisfying.

Easy Golden Onion Butter Rice Recipe

Yields: 4 servings Prep time: 10 minutes Cook time: 25 minutes Total time: 35 minutes

Ingredients:

  • 1 cup basmati rice, or other long-grain white rice

  • 2 cups chicken or vegetable broth, or water

  • 4 tablespoons unsalted butter, divided

  • 1 large yellow onion, finely chopped

  • 1/2 teaspoon ground turmeric

  • 1/2 teaspoon salt, or to taste

  • 1/4 teaspoon black pepper, or to taste

  • 2 tablespoons fresh parsley, chopped

Equipment:

  • Medium saucepan with a tight-fitting lid

  • Wooden spoon or spatula

Instructions:

  1. Rinse the Rice: Place the rice in a fine-mesh sieve and rinse under cold water until the water runs clear. Drain well.

  2. Sauté the Onion: Melt 2 tablespoons of butter in a medium saucepan over medium heat. Add the chopped onion and cook, stirring occasionally, for 10-15 minutes, or until the onion is very soft and golden brown.

  3. Toast the Rice: Add the remaining 2 tablespoons of butter to the saucepan and melt. Add the drained rice and ground turmeric. Cook, stirring constantly, for 1-2 minutes, or until the rice is lightly toasted and coated in the butter and onion mixture.

  4. Add Liquid and Simmer: Pour in the chicken or vegetable broth (or water). Add salt and black pepper. Bring the mixture to a boil.

  5. Simmer and Steam: Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15-20 minutes, or until all the liquid has been absorbed and the rice is tender. Do not lift the lid during this time!

  6. Fluff and Serve: Remove the saucepan from the heat and let it stand, covered, for 5 minutes. Fluff the rice gently with a fork. Stir in the chopped parsley. Serve immediately.

Tips:

  • For an even richer flavor, use a mixture of butter and olive oil to sauté the onions.

  • You can add other herbs or spices to customize the flavor of the rice. Try adding a pinch of saffron for a more exotic flavor and vibrant color.

  • For a vegetarian option, use vegetable broth instead of chicken broth.

  • This rice is delicious served alongside roasted chicken, grilled fish, or vegetable curries.
