Yields: 12 cookies Prep time: 15 minutes Bake time: 12-15 minutes Cool time: 10 minutes

Ingredients

For the Pineapple Rings & "Caramel"

  • 12 slices of canned pineapple rings (in 100% juice, not syrup), well-drained

  • 2 tablespoons unsalted butter or coconut oil, melted

  • 1/4 cup pure maple syrup (or a sugar-free alternative like monk fruit maple syrup)

For the Fitness Cookie Base:

  • 1 cup whole wheat pastry flour (or an all-purpose gluten-free flour blend)

  • 1/2 cup vanilla protein powder (or any favorite flavor, just ensure it’s not plain)

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/4 cup refined coconut oil, melted (or ghee)

  • 1/2 cup non-fat plain Greek yogurt

  • 1/4 cup liquid sweetener (honey, agave, or more maple syrup)

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1/4 cup mini dark chocolate chips (70% cocoa or greater)

Instructions

1. Prepare the Pineapple:

  • Preheat your oven to 375°F (190°C). Line a large, rimmed baking sheet with parchment paper for easy clean-up. This is a crucial step!

  • Lay the 12 well-drained pineapple rings in a single layer on the parchment paper. They should be spaced evenly.

  • In a small bowl, whisk together the melted butter (or coconut oil) and maple syrup. Brush this mixture generously over the tops and insides of the pineapple rings. This is what creates that beautiful, sticky, caramelized effect!

2. Make the Cookie Dough:

  • In a medium bowl, whisk together the dry ingredients: whole wheat flour, protein powder, baking soda, and salt.

  • In a separate larger bowl, whisk together the wet ingredients: melted coconut oil, Greek yogurt, liquid sweetener of your choice, egg, and vanilla extract until smooth.

  • Gradually add the dry ingredients to the wet ingredients, mixing with a rubber spatula just until a cohesive dough forms. Do not overmix.

  • Fold in the mini dark chocolate chips. The dough should be thick and slightly sticky.

3. Assemble and Bake:

  • Use a cookie scoop (about 1.5 tablespoons) to portion out the dough. Gently press a ball of dough into the center of each prepared pineapple ring. Use your fingers to press it down into a flat disk that perfectly fits inside the ring, spreading it to the inner edge. Don't press too hard, as you don't want to squeeze the caramel mixture out from under the ring.

  • Bake for 12-15 minutes, or until the edges of the cookies are light golden brown and the pineapple appears set and caramelized.

4. The Flip and Serve:

  • Remove the pan from the oven and let the cookies rest on the baking sheet for about 5 minutes. This allows the cookies and caramel to set properly.

  • This is the magical part! Place a second sheet of parchment paper and an inverted baking rack (or another baking sheet) directly over the warm cookies. Use oven mitts to grip both pans and confidently flip them over so the pineapple rings are now on top.

  • Carefully peel away the original top piece of parchment paper to reveal your glistening Fitness Pineapple Upside Down Cookies.

  • Let them cool for another 5 minutes on the rack before serving. They are best enjoyed warm or at room temperature.

Nutrition Tips:

  • For Extra Protein: Use a higher-protein Greek yogurt.

  • To Make it Vegan: Swap the egg for a "flax egg" (1 tbsp ground flaxseed mixed with 3 tbsp water, set for 10 minutes) and use a vegan protein powder.

  • A "Protein-Plus" Version: Sprinkle a small pinch of chopped walnuts or pecans into the caramel mixture inside each pineapple ring before adding the cookie dough for more healthy fats and protein.
