Prep Time: 20 mins Chill Time: 4 hours (or overnight) Yields: 12-16 mini bites
Ingredients:
For the Crust:
1 cup Almond flour
1/4 cup Oat bran (or ground rolled oats)
1 tablespoon Swerve (or preferred granular low-carb sweetener)
1/4 cup Butter, melted (or coconut oil)
For the Filling:
1 package (8 oz) Fat-free cream cheese, softened
1 package (8 oz) Sugar-free vanilla or lime gelatin (unprepared)
1 cup Boiling water
1/2 cup Ice water
Zest of 1 lime
1/4 cup Key lime juice (fresh is best)
For the Topping:
1 cup Sugar-free whipped topping (like Cool Whip or similar)
Fresh lime slices, for garnish
(Optional) A sprinkle of chia seeds and granola
Instructions:
Prepare the Crust: In a small bowl, combine the almond flour, oat bran, and sweetener. Pour in the melted butter and stir until it reaches a sandy, crumb-like consistency.
Form the Base: Line a mini-muffin tin with liners. Evenly press about 1 tablespoon of the crust mixture into the bottom of each liner. Press it down firmly to create a solid base. Place the tin in the freezer to set while you prepare the filling.
Dissolve the Gelatin: Empty the sugar-free gelatin powder into a medium-sized bowl. Add the boiling water and stir constantly for 2 minutes until fully dissolved. Add the lime zest.
Cool the Gelatin: Stir the ice water into the dissolved gelatin mixture until it is slightly cooled and thickened. Set aside.
Cream the Cheese: In a separate large bowl, use a hand mixer to beat the fat-free cream cheese until it is smooth and creamy. Gradually blend in the Key lime juice.
Combine the Filling: Slowy pour the cooled gelatin mixture into the cream cheese, beating on low speed until perfectly smooth and well combined.
Fold in the Whipped Toping: Gently fold the sugar-free whipped topping into the mousse mixture until it is light and fluffy. Do not overmix.
Fill and Chill: Spoon or pipe the mousse into the muffin liners over the prepared crusts. Transfer the tin to the refrigerator and chill for at least 4 hours, or overnight, until completely set.
Serve: Once set, remove the bites from the muffin tin and peel away the liners. Garnish each bite with a small dollop of whipped topping and a fresh lime slice. If desired, lightly dust with chia seeds or granola for extra texture.
Enjoy your healthy and delicious treat!
