  • For the Filling:

    • 1 package (8 oz) Fat-free cream cheese, softened

    • 1 package (8 oz) Sugar-free vanilla or lime gelatin (unprepared)

    • 1 cup Boiling water

    • 1/2 cup Ice water

    • Zest of 1 lime

    • 1/4 cup Key lime juice (fresh is best)

  • For the Topping:

    • 1 cup Sugar-free whipped topping (like Cool Whip or similar)

    • Fresh lime slices, for garnish

    • (Optional) A sprinkle of chia seeds and granola

Instructions:

  1. Prepare the Crust: In a small bowl, combine the almond flour, oat bran, and sweetener. Pour in the melted butter and stir until it reaches a sandy, crumb-like consistency.

  2. Form the Base: Line a mini-muffin tin with liners. Evenly press about 1 tablespoon of the crust mixture into the bottom of each liner. Press it down firmly to create a solid base. Place the tin in the freezer to set while you prepare the filling.

  3. Dissolve the Gelatin: Empty the sugar-free gelatin powder into a medium-sized bowl. Add the boiling water and stir constantly for 2 minutes until fully dissolved. Add the lime zest.

  4. Cool the Gelatin: Stir the ice water into the dissolved gelatin mixture until it is slightly cooled and thickened. Set aside.
