These mac and cheese balls are a healthier, lighter alternative to the traditional deep-fried version. By air-frying, you get the same crispy exterior and cheesy interior without all the extra oil. Perfect as an appetizer, a party snack, or a fun side dish.
Ingredients:
4 cups cold macaroni and cheese (leftovers work perfectly!)
1 cup panko breadcrumbs
1/2 cup all-purpose flour
2 large eggs
1 tablespoon milk
Cooking spray (olive oil or avocado oil)
Optional: 1/4 cup grated Parmesan cheese (for breading mix)
Optional: 1/2 teaspoon paprika or garlic powder (for breading mix)
For Serving: Chopped fresh parsley and dip (like marinara or a light ranch)
Instructions:
Prep the Mac and Cheese: It’s crucial to use cold, firm macaroni and cheese. If you have leftovers, they are ideal. If you're making fresh mac and cheese, let it cool completely in the refrigerator until it’s solid. This ensures the balls hold their shape.
Form the Balls: Using a cookie scoop or your hands, portion the cold mac and cheese into balls, about 1-2 inches in diameter. Roll them tightly to ensure they are packed dense. Place them on a baking sheet lined with parchment paper.
Chill (Optional but Recommended): Place the rolled mac and cheese balls in the refrigerator or freezer for 15-20 minutes. This helps them firm up further, which is especially helpful if they were a little soft after rolling.
Set Up the Breading Station:
Bowl 1: Flour.
Bowl 2: Whisk together the eggs and milk.
Bowl 3: Combine panko breadcrumbs with the optional Parmesan cheese and spices (paprika or garlic powder) if using.
Bread the Balls: For each mac and cheese ball:
Roll the ball in the flour, shaking off any excess.
Dip it completely into the egg mixture.
Finally, roll it in the panko breadcrumbs, pressing gently so the breadcrumbs stick. Place back on the parchment-lined baking sheet.
Air Fry:
Preheat your air fryer to 375°F (190°C).
Arrange the mac and cheese balls in the air fryer basket in a single layer. Make sure not to overcrowd them; they need space for the air to circulate. You will likely need to cook them in batches.
Generously spray the balls with cooking spray.

Serve: Let the mac and cheese balls cool for 1-2 minutes before serving—the cheese inside will be very hot. Garnish with a sprinkle of chopped fresh parsley, and serve with your favorite dipping sauce.
