Yields: 12 cupcakes Prep time: 15 minutes Bake time: 15 minutes
Cupcake Ingredients:
1 ½ cups all-purpose flour
½ cup cocoa powder
1 scoop chocolate protein powder (about ¼ cup)
1 teaspoon baking soda
½ teaspoon salt
1 cup granulated sugar
1 cup milk (dairy or non-dairy)
½ cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 teaspoon mint extract
Frosting Ingredients:
1 ripe avocado
1 scoop vanilla protein powder (about ¼ cup)
2 tablespoons cocoa powder
¼ cup powdered sugar (or more to taste)
¼ teaspoon mint extract
1-2 tablespoons milk (dairy or non-dairy, for consistency)
Mini chocolate chips for sprinkling (optional)
Instructions:
Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a muffin tin with 12 cupcake liners.
Combine Dry Ingredients: In a large bowl, whisk together the flour, cocoa powder, protein powder, baking soda, and salt.
Combine Wet Ingredients: In a separate medium bowl, whisk together the sugar, milk, vegetable oil, eggs, vanilla extract, and mint extract.
Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Fill Muffin Cups: Fill each muffin cup about two-thirds full with the batter.
Bake: Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Allow the cupcakes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Prepare Frosting: In a blender or food processor, combine the avocado, protein powder, cocoa powder, powdered sugar, and mint extract. Blend until smooth and creamy. If the frosting is too thick, add milk one tablespoon at a time until you reach your desired consistency.
Frost and Decorate: Once the cupcakes are completely cool, frost them with the avocado-mint frosting. Sprinkle with mini chocolate chips if desired.
Tips for Success:
For a richer chocolate flavor, use Dutch-processed cocoa powder.
If your avocado is not perfectly ripe, the frosting may be slightly lumpy. To fix this, you can strain the frosting through a mesh sieve.
Don't overbake the cupcakes, or they will be dry.
Let the cupcakes cool completely before frosting, or the frosting will melt.
Store these cupcakes in an airtight container in the refrigerator for up to 3 days.
Enjoy your delicious and healthy chocolate-mint protein cupcakes!
