Ingredients

1 lb lean ground beef (or ground turkey/chicken)
¼ cup almond flour (or whole wheat breadcrumbs)
1 large egg
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
½ tsp salt
¼ tsp black pepper
For the French Onion Sauce:
2 large yellow onions, thinly sliced
1 tbsp olive oil
2 cups low-sodium beef broth
1 tbsp Worcestershire sauce
1 tsp fresh thyme leaves
Salt and pepper to taste
¾ cup shredded Gruyère or light Swiss cheese
Instructions
Form the Meatballs: In a large bowl, mix the ground beef, almond flour, egg, minced garlic, parsley, salt, and pepper. Shape into 12-14 even-sized meatballs.
Sear: Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the meatballs and sear for 2–3 minutes on each side until browned (they don't need to be fully cooked through yet). Remove meatballs and set aside on a plate.
Caramelize the Onions: In the same skillet, turn the heat down to medium. Add the sliced onions. Cook for about 15–20 minutes, stirring frequently, until they are soft, rich, and deeply golden brown. (If they dry out, add a splash of water or broth).
Simmer the Sauce: Stir in the beef broth, Worcestershire sauce, and thyme. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
Combine: Return the meatballs and any resting juices back into the skillet. Reduce heat to medium-low, cover, and let simmer for 8–10 minutes until the meatballs are cooked through and the sauce has thickened.
Melt the Cheese: Top each meatball generously with the shredded Gruyère cheese. Place the skillet under your oven broiler for 2–3 minutes until the cheese is melted, bubbly, and golden.
