Ingredients
4–6 bone-in, skin-on chicken thighs (or boneless, skinless thighs)
1 tablespoon olive oil
Salt and freshly cracked black pepper, to taste
4 cloves garlic, minced
1/3 cup honey
2 tablespoons soy sauce (or tamari)
1 tablespoon rice vinegar (or apple cider vinegar)
Optional Garnishes: Toasted sesame seeds, chopped green onions, fresh parsley, and red pepper flakes.
Instructions
Season the Chicken: Pat the chicken thighs dry with a paper towel. Season both sides generously with salt and black pepper.
Sear to Golden Perfection: Heat the olive oil in a large skillet over medium-high heat. Add the chicken thighs, skin-side down. Sear for 5–7 minutes until the skin is beautifully golden and crispy. Flip and cook for another 4–5 minutes. Remove the chicken from the skillet and set aside on a plate (it will finish cooking in the sauce).
Make the Sauce: Lower the skillet heat to medium. Drain excess grease, leaving about a tablespoon in the pan. Add the minced garlic and sauté for about 30 seconds until fragrant—be careful not to let it burn!
Simmer and Thicken: Pour in the honey, soy sauce, and rice vinegar. Stir well, scraping up any delicious browned bits from the bottom of the pan. Let the sauce simmer for 2–3 minutes until it starts to bubble and slightly thicken.
Coat and Finish: Return the chicken thighs (and any rested juices) back into the skillet. Spoon the sticky sauce generously over the top of the chicken. Reduce heat to low and let everything simmer together for another 5 minutes, or until the chicken internal temperature reaches 74°C (165°F).
Serve: Garnish with sesame seeds, green onions, and fresh parsley. Serve hot over a bed of fluffy rice or with roasted vegetables.
