I absolutely love making these when strawberries are in season, but honestly, they hit the spot all year round. Since this is for Fitness Recipesz, I’ve tweaked a classic crumb bar recipe to be a bit healthier—using wholesome rolled oats, a touch of maple syrup instead of refined white sugar, and fresh fruit for that jammy center.
The best part? The crust and the topping use the exact same mixture, so you only need a couple of bowls to pull this together.

Ingredients
For the Strawberry Filling:
3 cups fresh strawberries, diced (frozen works too, just thaw and drain excess liquid)
1 tbsp lemon juice
2 tbsp maple syrup or honey
1 ½ tbsp chia seeds (this is my secret trick to thicken the filling naturally!)
For the Crumb & Crust:
1 ½ cups old-fashioned rolled oats
1 cup whole wheat flour (or almond flour for a gluten-free option)
⅓ cup coconut oil, melted (or unsalted butter)
⅓ cup maple syrup or honey
1 tsp vanilla extract
½ tsp baking powder
¼ tsp sea salt
Instructions
Preheat and Prep: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving a little overhang on the sides so you can easily lift the bars out later.
Make the Jammy Filling: Add the diced strawberries, lemon juice, and maple syrup to a small saucepan over medium heat. Let it bubble gently for about 5-7 minutes, mashing the berries slightly with a fork as they soften. Remove from heat, stir in the chia seeds, and set aside to thicken while you make the crust.
Mix the Crumb: In a large mixing bowl, combine the oats, flour, baking powder, and sea salt. Pour in the melted coconut oil, maple syrup, and vanilla extract. Stir until the mixture comes together into a crumbly dough.
Create the Base: Pour about two-thirds of the oat mixture into your prepared baking dish. Use your hands or the back of a spoon to press it down firmly and evenly to create a solid crust.
