LEMON TURMERIC GINGER CHICKEN & RICE SOUP

 Ingredients:

  • 1 tablespoon olive oil

  • 1 large yellow onion, chopped

  • 3 cloves garlic, minced

  • 1-inch piece of fresh ginger, peeled and grated

  • 1 tablespoon ground turmeric

  • 1 teaspoon red pepper flakes (optional, for heat)

  • 6 cups chicken broth

  • 1 cup cooked shredded chicken

  • 1 cup cooked long-grain white rice

  • 1 lemon, juiced

  • Salt and pepper, to taste

  • Fresh cilantro, chopped, for garnish

  • Fresh parsley, chopped, for garnish

  • Lemon slices, for garnish

LEMON TURMERIC GINGER CHICKEN & RICE SOUP

Instructions:

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes.

  2. Stir in the minced garlic, grated ginger, ground turmeric, and red pepper flakes (if using). Cook for another minute, until fragrant.

  3. Pour in the chicken broth and bring the mixture to a simmer.

  4. Add the cooked shredded chicken and cooked rice to the pot. Stir well to combine.

  5. Simmer the soup for about 10-15 minutes, allowing the flavors to meld together.

  6. Stir in the fresh lemon juice. Season with salt and pepper to taste.

  7. Serve hot, garnished with fresh chopped cilantro, fresh parsley, and additional lemon slices if desired.
