Ingredients:

For the cake:

  • 1 ½ cups all-purpose flour

  • 1 cup vanilla protein powder

  • 2 teaspoons baking powder

  • ½ teaspoon salt

  • ½ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • ¾ cup milk

For the filling:

  • 1 cup fresh or frozen raspberries

  • 1 tablespoon granulated sugar

  • 1 tablespoon water

  • 1 teaspoon cornstarch

For the frosting:

  • 1 cup cream cheese, softened

  • ½ cup unsalted butter, softened

  • 2 cups powdered sugar

  • 1 teaspoon vanilla extract

  • ½ cup vanilla protein powder (optional, for extra protein boost)

  • Fresh raspberries for decoration

Instructions:

Prepare the cake:

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

  2. In a medium bowl, whisk together the flour, protein powder, baking powder, and salt. Set aside.

  3. In a large bowl, cream together the butter and sugar until light and fluffy.

  4. Beat in the eggs one at a time, then stir in the vanilla extract.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.

  6. Divide the batter evenly between the prepared pans.

  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

  8. Let the cakes cool completely in the pans before removing them.

Prepare the filling:

  1. In a small saucepan, combine the raspberries, sugar, water, and cornstarch.

  2. Bring the mixture to a simmer over medium heat, stirring frequently.

  3. Continue to simmer for 5-7 minutes, until the raspberries are broken down and the mixture has thickened.

  4. Remove from heat and let cool completely.

Prepare the frosting:

  1. In a large bowl, beat the cream cheese and butter together until smooth.

  2. Gradually add the powdered sugar and mix until well combined.

  3. Stir in the vanilla extract and vanilla protein powder (if using).

Assemble the cake:

  1. Place one cake layer on a serving platter.

  2. Spread half of the raspberry filling over the cake layer.

  3. Top with the second cake layer.

  4. Spread the remaining raspberry filling over the top layer.

  5. Frost the top and sides of the cake with the cream cheese frosting.

  6. Decorate with fresh raspberries.
