Ingredients
3 tablespoons unsalted butter
1 package (10 oz / about 40 cups) fresh miniature marshmallows (reserve 1 cup to stir in at the end for extra gooey pockets!)
6 cups crispy rice cereal (such as Rice Krispies)
Optional: A pinch of salt and 1/2 teaspoon pure vanilla extract (to elevate the flavor)
Instructions
Prepare the Pan: Lightly grease a 9 13-inch baking pan with butter or line it with parchment paper. Set aside.
Melt the Base: In a large saucepan, melt the butter over low heat. Add the marshmallows (minus the 1 reserved cup) and stir constantly until completely melted and smooth. Remove from heat.
Enhance the Flavor (Optional): Stir in the vanilla extract and a pinch of salt.
Mix: Add the crispy rice cereal and the remaining 1 cup of mini marshmallows. Gently fold the mixture together until the cereal is evenly coated.
Press Gently: Transfer the mixture into your prepared pan. Using a piece of wax paper or a buttered spatula, press the mixture evenly into the pan.
Tip: Do not pack the treats down too firmly, or they will turn out hard instead of light and gooey!
