The Recipe: Spicy Tomato and Cream Pasta

This recipe serves 4 people.

Ingredients:

  • 1 lb (450g) cavatappi or macaroni pasta

  • 1 tablespoon olive oil

  • 1 small yellow onion, finely diced

  • 1 (6 oz) can tomato paste

  • 1 cup heavy cream

  • 1/2 cup reserved pasta water

  • 1/2 teaspoon salt, to taste

  • 1/4 teaspoon black pepper

  • 1/4 cup grated Parmesan cheese, plus extra for serving

  • 1 tablespoon fresh parsley, chopped

Instructions:

  1. Boil the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions for al dente. Before draining, reserve 1 cup of the starchy pasta water. Drain the pasta and set aside.

  2. Aromatics: In a large skillet or pan, melt the butter with the olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 5-7 minutes. Add the minced garlic and red pepper flakes, cooking for another 60 seconds until fragrant.

  3. The Base: Add the tomato paste to the skillet. Cook, stirring constantly, for 2-3 minutes until the paste is deep red and slightly caramelized.
