Ingredients:
Chia Base:
1/4 cup chia seeds
1 cup unsweetened almond milk (or milk of your choice)
1 scoop vanilla protein powder (optional, collagen or whey work best)
1 tsp premium ceremonial grade matcha powder (sifted for smoothness)
1/2 tsp vanilla extract
Honey or maple syrup to taste (optional sweetener)
Toppings (as pictured):
1 tablespoon whipped cream or coconut cream
1/2 banana, sliced
1/2 kiwi, cubed
A small handful of fresh blueberries
1 tablespoon flaked almonds (toasted optional)
1 teaspoon shredded coconut
Instructions:
Prep the Liquids: In a jar, small bowl, or blender, combine the milk, protein powder (if using), vanilla extract, and any liquid sweetener.
Add Matcha: Carefully sift the matcha powder over the liquid to reduce clumping. Whisk or blend vigorously until the matcha is fully incorporated and the liquid is smooth and bright green.
Combine with Chia: Add the chia seeds to the mixture. Whisk well to ensure all seeds are separated and not stuck together in clumps.
The "Check Back" (Optional but Recommended): Let the mixture sit on the counter for 10-15 minutes, then give it another good stir. This helps prevent the seeds from settling in a block at the bottom.
Chill: Cover the container with a lid or wrap and refrigerate for at least 4 hours, or ideally overnight, until the seeds have absorbed the liquid and the mixture is thick and pudding-like.
Serve and Top: Before eating, stir the pudding. Spoon into your serving dish. Add a dollop of cream, then arrange the fruit (banana, kiwi, blueberries) and nuts/coconut on top. Dust with a tiny bit more matcha for presentation.
Tips:
Blending for Smoothness: If you dislike the classic "tapioca-like" texture of chia seeds, blend all ingredients (including the chia seeds) before chilling for a mousse-like pudding.
Protein Mixing: If your protein powder is prone to clumping, blend the liquids first before stirring in the chia seeds.
