Ingredients:
1 cup jasmine or long-grain white rice
2 cups water or chicken broth
4-6 slices bacon, chopped
2 tablespoons vegetable oil, divided
4 cups roughly chopped bok choy (greens and stems separated)
2 cloves garlic, minced
1 tablespoon ginger, minced
1 tablespoon soy sauce
1 teaspoon sesame oil
Salt and black pepper to taste

Instructions:
Cook the Rice: Combine the rice and water (or broth) in a saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
