Recipe: Ground Turkey and Peppers
Yields: 4 servings
Ingredients:
1 lb (450g) lean ground turkey
1 tbsp olive oil
1 large red bell pepper, sliced
1 large yellow bell pepper, sliced
1 large green bell pepper, sliced
1/2 large onion, sliced (optional)
2 cloves garlic, minced
1 tbsp soy sauce (or tamari)
1 tbsp hoisin sauce
1 tbsp honey (or maple syrup)
1/2 cup chicken or beef broth
1/2 tsp cornstarch, mixed with 1 tsp cold water
Fresh parsley, for garnish
Instructions:
Prep the Veggies: Slice the bell peppers and onion into thin strips. Mince the garlic. In a small bowl, whisk together the soy sauce, hoisin sauce, honey, and broth. Set aside.
Brown the Turkey: Heat the olive oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes).
Sauté the Peppers: Remove the turkey from the skillet and set aside. Add the sliced peppers and onion (if using) to the same skillet. Sauté until tender-crisp, about 5 minutes.
Combine and Sauce: Add the minced garlic and cook for 1 minute until fragrant. Return the cooked turkey to the skillet. Pour the sauce mixture over the ingredients.
Thicken the Sauce: Add the cornstarch slurry and stir constantly until the sauce thickens and coats the turkey and peppers, about 2-3 minutes.
Serve: Garnish with fresh parsley. Serve immediately over rice, quinoa, or noodles.
