Ingredients:

  • 1 sheet frozen puff pastry, thawed

  • 6 cooked breakfast sausage links (approx. 6-7 oz), cut in half

  • 4 large eggs, scrambled

  • 1 cup shredded cheddar cheese

  • 1 tablespoon fresh parsley, finely chopped

  • 1 egg, lightly beaten (for egg wash)

  • 1 tablespoon sesame seeds (optional)

  • Salt and pepper to taste

Instructions:

  1. Prepare for Baking: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking.

  2. Scramble the Eggs: In a small pan, cook the scrambled eggs over medium heat until just set, seasoning with salt and pepper to taste. Remove from heat and stir in the finely chopped fresh parsley. Set the eggs aside.

  3. Prepare the Puff Pastry: On a lightly floured surface, unroll the thawed sheet of puff pastry. Use a rolling pin to gently roll it out into an 11x11 inch square. Cut the square into 12 even rectangles (three rows of four).

  4. Assemble the Rolls: On one end of each puff pastry rectangle, place a generous sprinkle of the shredded cheddar cheese. Add a small spoonful of the scrambled eggs on top of the cheese, and then place a sausage link half on top of the eggs.

  5. Roll and Seal: Carefully roll up each pastry rectangle, starting from the filled end and rolling towards the empty end. Place the finished rolls, seam-side down, on the prepared baking sheet, leaving about an inch of space between each roll.

  6. Glaze and Bake: Lightly brush the top and sides of each roll with the beaten egg wash. This will give them a beautiful golden-brown color. If desired, sprinkle the tops with sesame seeds.

  7. Bake: Bake for 15-20 minutes, or until the pastry is puffed, golden brown, and the cheese is melted.
