Alright, love, let's get you sorted with a proper salmon recipe. This one's a cracker, a real crowd-pleaser that's dead easy and tastes absolutely brilliant. We're doing a brown sugar baked salmon, a bit of a sweet and salty number that's perfect for a weeknight supper or even for having a few mates round.
Brown Sugar Baked Salmon
This recipe is simple, quick, and uses ingredients you've likely got knocking about in the cupboard. It gives you a beautiful, flaky salmon fillet with a gorgeous, slightly sticky crust.
What you'll need:
Salmon fillet: About 1kg, skin on. Doesn't matter if it's one big piece or a few smaller ones.
Light brown sugar: A good, generous 65g. Don't be shy!
Dijon mustard: A nice dollop, about 2 tablespoons.
Soy sauce: 1 tablespoon. For that salty, umami kick.
Garlic powder: 1 teaspoon.
Black pepper: A good grind of it.
How to make it:
First things first, get your oven warmed up to 190°C (170°C fan). Line a baking tray with some baking paper to save yourself a bit of scrubbing later on.
Pop your salmon fillet onto the lined tray, skin-side down.
Now, for the glaze. In a small bowl, whisk together the brown sugar, Dijon mustard, soy sauce, garlic powder, and a good few grinds of black pepper. Give it a proper mix until it's a smooth paste.
Get a pastry brush or the back of a spoon and slather this gorgeous mixture all over the top of the salmon. Make sure you get a nice, even layer.
Pop it into the preheated oven for 15-20 minutes. The time will depend on how thick your fillet is. You're looking for it to be cooked through, and the glaze to be bubbling and sticky.
Once it's done, take it out and let it rest for a couple of minutes before serving.
