Crunchy Onion Rings
Ingredients:
1 large sweet onion (like a Vidalia), cut into 1/2-inch-thick rings
1 1/2 cups all-purpose flour, divided
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (for a little kick!)
1 teaspoon salt
1/2 teaspoon black pepper
1 cup cold club soda or seltzer water
Vegetable oil, for frying
Instructions:
Prep the onion: Separate your onion rings and set them aside.
Make the batter: In a medium bowl, whisk together 1 cup of the flour, paprika, garlic powder, cayenne, salt, and black pepper. Slowly pour in the cold club soda, whisking until the batter is smooth. It should be a little thick, like pancake batter.
Dredge 'em: Put the remaining 1/2 cup of flour in a separate shallow dish. First, dredge each onion ring in the flour, shaking off the excess. Then, dip each floured ring into the batter, making sure it's fully coated. Let any extra batter drip off.
