I’ve been asked to share my recipe for my lovely, healthy citrus chicken. It’s a real treat, and the best part is it's dead easy and good for you. It's a proper winner for a weeknight supper, and if you're trying to watch your figure, this is a brilliant one to have up your sleeve.
Proper Healthy Citrus Chicken
Prep time: About 10 minutes Cook time: 20-25 minutes Serves: 2 lovely people
What you'll need:
2 skinless chicken breasts1 orange, and you’ll want the juice and the zest from it1 lemon, again, juice and zest please1 clove of garlic, finely chopped or gratedA little splash of olive oilA teaspoon of runny honey (optional, but it gives it a lovely glaze)A handful of fresh coriander or parsley, choppedSalt and pepper to tasteMethod:
Pop your oven on to 200°C (180°C Fan), gas mark 6. Just get it nice and hot and ready.Get a small bowl and mix up your marinade. Squeeze the juice from the orange and the lemon into it. Chuck in the zest, the chopped garlic, and that little drizzle of olive oil. If you're feeling a bit sweet, put in the honey too. Give it all a good stir.Next, take your chicken breasts. Give them a little pat dry with some kitchen paper. Then, you can either pop them in a baking dish and pour your marinade over, or if you've got the time, let them have a good sit in the marinade for about 20 minutes to an hour. It’ll make them even more juicy and full of flavour.Once they’ve had a good soak, pop the dish into the preheated oven. Let them cook for about 20-25 minutes. You'll know they're ready when they're cooked all the way through and lovely and golden.When they’re out of the oven, let them rest for a couple of minutes. This is a crucial step! It keeps all the juices in.Serve them up with a sprinkle of that fresh coriander or parsley. It really brightens everything up.To serve:
I love to have this with a mountain of steamed green vegetables, like broccoli and green beans, and maybe a spoonful of quinoa or brown rice to make it a proper filling meal.
